Wild chives, Allium schoenoprasum var. sibiricum
Wild chives are a showy, early-blooming, edible herb. Growing in dense clumps with pompom-like, light purple flowers, the plant adds colour to the front of a border, boulevards, and herb gardens.
The hollow leaves emerge as one of the first greens and are edible. They add a mild onion flavour to salads and warm dishes and contain antifungal properties. The flowers pep up salads with colour and flavour. Harvesting will prolong the bloom time and stimulate the growth of fresh leaves. The harvest can be frozen.
